Health-focused chain serves bone broth, bowls, and gluten-free menu.

Springbone Kitchen, a health-forward regional chain, opened its Hoboken location at 506 Washington Street on July 7, 2026. The restaurant replaces the former Bon Banh space and serves bone broth, protein bowls, smoothies, and desserts.

The opening brings a popular clean-eating option to Hudson County, offering entirely gluten-free menu items. The chain, which has 10 locations in New York City and one in Millburn, aims to expand further with planned DC-area locations.


Springbone Kitchen was founded in 2016 by Englewood, NJ natives Jordan Feldman and Sam Eckstein.

The entire menu is gluten-free and uses bone broth to infuse dishes with protein.

“We’re anticipating opening early next year,” said founder Jordan Feldman in September 2025, confirming the Hoboken plans.

Impact: Hoboken residents now have new access to health-conscious fast-casual dining options, including vegan and vegetarian broths.

What Happens Next: The chain plans to open at least 10 additional locations in the Washington, DC area, officials said.
