New Latin American spot replaces Subia’s Vegan Cafe at 506 Jersey Avenue.
Gemini, a new Latin American cafe, opened Wednesday at 506 Jersey Avenue, steps from Van Vorst Park, replacing the long-running Subia’s Vegan Cafe.
The soft opening brings a fresh dining option to the neighborhood, offering breakfast, lunch, and dinner with a focus on quality ingredients and community connection.
The cafe serves breakfast, lunch, and dinner, plus coffee, tea, and mocktails, according to its soft opening menu.
Menu items include croissants, empanadas, burgers, salad bowls, huevos rancheros, shrimp ceviche, and desserts like a sea salt brownie.
“Gemini is rooted in connection, community, and transformation,” the cafe said in an Instagram post.
Impact: Residents gain a new spot for Latin-inspired meals, with vegan options like a chopped salad and an Impossible meatball sub honoring Subia’s legacy.
What Happens Next: The cafe is open daily from 8 AM to 8 PM, walk-ins welcome, and plans to add delivery through GrubHub, Uber Eats, and DoorDash soon.
