New bakery and cafe to open at 500 Washington Street, replacing a former gelato shop.

Dän Bakery + Cafe, a family-owned bakery from Morristown, is preparing to open a second location at 500 Washington Street in Hoboken, according to plans shared with local media. The space previously housed il Laboratorio del Gelato, which has permanently closed.

This new addition brings a focus on slow fermentation and high-quality ingredients to the Mile Square, offering residents a cozy spot for pastries, desserts, and cafe staples. It replaces a popular gelato spot and signals continued growth in Hoboken’s food scene.


The team behind Dän Bakery + Cafe confirmed plans to open in Hoboken via a direct message on Sunday, May 17th.

As of July 16th, renovation work is underway at 500 Washington Street with signs removed and windows papered over.

“Great baking starts long before anything reaches the oven,” said a representative from Dän Bakery + Cafe, referencing the Kazakh meaning of their name, which translates to ‘seed.’

Impact: Residents can expect a menu featuring items like Caprese Cheese Sandwiches, garden veggie scrambles, and phyllo pastries, though the full Hoboken menu has not yet been released.

What Happens Next: An official opening date has not been announced, but renovations suggest the bakery could open in the coming weeks or months.
